Alright readers, here's a little secret: I have a problem. A cookie problem that is. I love cookies - especially with my afternoon tea. So instead of depriving myself of my true love, I have been making healthy versions of my sweet friends and so far have loved them all!
I just discovered this recipe for Sesame Cookies and wow, they are great! If you have the same love for cookies as I do, or are entertaining over the holidays - these are a quick, easy dessert to serve with tea and/or coffee (in addition to all the other desserts that are sure to be there!) They are light and tasty and are refined sugar and gluten free!
Ingredients:
- In a large bowl, combine almond flour, salt and baking soda
- In a smaller bowl, blend together agave, tahini, oil and vanilla
- Blend the dry ingredients into the wet
- Form the dough into 1 inch balls and roll in the sesame seeds
- Place on a parchment paper lined baking sheet and flatten
- Bake at 350° for 8-10 minutes until lightly brown
- Cool on baking sheet
- Serve
Makes 14 cookies
