Alright, maybe the title of this blog post is a bit extreme, but I recently found this recipe online, care of Alton Brown - commentator on Iron Chef America and host of The Next Iron Chef - he's a culinary guru extraordinaire and I have to say, I think I saw the Gates of Heaven when I made it and had my first bite!
In fact, I ate it for a whole meal the next day - yes, dinner was guacamole and baked tortilla chips! I had to share this with you - the avocado (as you have read from my previous posts!) are loaded with good-for-you fats and is a delicious, satisfying way to up your vegetable intake for the day!
Here it is! (btw, the recipe calls for 3 avocados but I only had 2 - I modified the other proportions roughly and it was just as delicious!)
Ingredients
- 3 Haas avocados, halved, seeded and peeled
- 1 lime, juiced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne
- 1/2 medium onion, diced
- 2 Roma tomatoes, seeded and diced
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
Directions
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.
