Recipe ingredients
2 cups (500 mL) oatmeal
1 cup (250 mL) whole wheat flour
1/2 cup (125 mL) dried cranberries
1/2 cup (125 mL) dried apricots, chopped
1/2 cup (125 mL) currant raisins
1/3 cup (80 mL) shredded coconut, toasted
1/3 cup (80 mL) maple syrup
1 egg, beaten
1/2 cup (125 mL) Canola Harvest margarine, melted
Preparation
Preheat the oven to 350°F/180°C. Mix the first six ingredients in a bowl. In another bowl, mix the maple syrup, egg and margarine. Incorporate the moist mixture into the dry ingredients. Mix well. Brush a 10 x 14 in. (25 x 36 cm) rectangular cookie sheet with margarine. Spread the mixture evenly on the cookie sheet. Bake for approximately 15 min., or until cooked throughout. Cool and cut into 16 bars.
